Not sure where I found this recipe, but it sounds easy and good.

Ingredients

  • 3/4 cup teriyaki sauce and marinade (prepared)
  • 1/2 cup green onions, sliced
  • 2 tablespoons fresh ginger, peeled and grated
  • 2 teaspoons dark sesame oil
  • 2 cloves garlic, minced
  • 1 pound skinless, boneless chicken breasts, cut into 24 pieces
  • 2 large red bell peppers, cut into 24 1-inch pieces
  • 2 medium zucchini, cut into 24 chunks
  • 24 small mushrooms (3/4 pound)
  • - vegetable cooking spray
  • 3 cups cooked soba noodles or rice
  • 8 - bamboo skewers (soaked in water for 30 minutes)

How To Make yakitori chicken kabobs

  • Step 1
    Combine first 6 ingredients in a bowl; marinate in refrigerator 30 minutes, stirring occasionally.
  • Step 2
    Remove green tops from onions, and cut white portion of each onion into 3 pieces; set aside.
  • Step 3
    Drain chicken, reserving marinade.
  • Step 4
    Prepare the grill.
  • Step 5
    Thread 3 chicken pieces, 3 onion pieces, 3 zucchini chunks, 3 pepper squares, and 3 mushrooms alternately onto each of 8 skewers.
  • Step 6
    Place kabobs on grill rack and cook 15 minutes, occasionally turning and basting with reserved marinade.
