wild turkey or chicken witches

I've been making these, going on 30 years now. It was a recipe of my husband's mother. This is a good way to use up that leftover turkey (tame or wild)or chicken or pheasant.

Ingredients

  • FILLING:
  • 1 1/2 cups diced celery
  • 2 1/2 cups cooked, diced, chicken, wild turkey or tame turkey or pheasant
  • 1/4 - onion, sliced in slivers
  • 2 tablespoons lemon juice
  • - salt & pepper to taste
  • 3/4 cup mayonnaise
  • TOPPING:
  • - fritos -regular, not scoops
  • - shredded cheddar cheese
  • - *hamburger buns, buttered & grilled on top of stove

How To Make wild turkey or chicken witches

  • Step 1
    Mix all FILLING ingredients by hand; set aside.
  • Step 2
    Split the *buns https://www.justapinch.com/recipe/hamburger-buns-by-peggi-anne-tebben-cookiequeen & butter & grill on a griddle on top of stove.
  • Step 3
    Preheat oven to 350° (I use my little countertop oven).
  • Step 4
    On a baking pan, place all bottom buns on & layer, in order, the meat mixture, hand full of regular Fritos & then a hand full of shredded cheese. Place in oven & heat, open face for about 8-10 min.
  • Step 5
    Place the top buns on & cover the whole baking pan with aluminum foil (not the bottom). Return to oven & continue to heat for another 15 - 20 minutes.
