white bean chicken chili

Good week night dinner. It's quick and easy. I usually serve it with rice and a salad. Can be a little spicy, so adjust red pepper as desired. Enjoy!

Ingredients
- 2 tablespoons oil
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 tablespoon ground cumin
- 1/2 teaspoon crushed red pepper, dried
- 1 teaspoon oregano, dried
- 1 pound chicken breast halves, skinless and boneless
- 3- 15 oz cans white beans
- 1 cup chicken broth
- 1- 7 oz cans diced green chilies
- 1/2 cup whipping cream
- 1/4 cup fresh cilantro, chopped (optional)
How To Make white bean chicken chili

Step 1Heat oil over medium heat. Add onion, garlic, cumin, oregano and red pepper. Saute 5 minutes.

Step 2Cut chicken into 1 inch pieces. Season with salt and pepper and add to pan. Saute 5 minutes.

Step 3Drain beans and reserve 1/2 cup of liquid. Add beans, broth, chilies, cream and reserved liquid to chicken. Simmer until chicken is tender and cooked through, about 10 minutes. Season to taste with salt and pepper. Top with cilantro.
