White Bean Chicken Chili

Good week night dinner. It's quick and easy. I usually serve it with rice and a salad. Can be a little spicy, so adjust red pepper as desired. Enjoy!

2 Tbsp
1 large
onion, chopped
4 clove
garlic, chopped
1 Tbsp
ground cumin
1/2 tsp
crushed red pepper, dried
1 tsp
oregano, dried
1 lb
chicken breast halves, skinless and boneless
3- 15 oz can(s)
white beans
1 c
chicken broth
1- 7 oz can(s)
diced green chilies
1/2 c
whipping cream
1/4 c
fresh cilantro, chopped (optional)


1Heat oil over medium heat. Add onion, garlic, cumin, oregano and red pepper. Saute 5 minutes.
2Cut chicken into 1 inch pieces. Season with salt and pepper and add to pan. Saute 5 minutes.
3Drain beans and reserve 1/2 cup of liquid. Add beans, broth, chilies, cream and reserved liquid to chicken. Simmer until chicken is tender and cooked through, about 10 minutes. Season to taste with salt and pepper. Top with cilantro.
