This is a delicious version of White Bean chili. Very flavorful and the cream cheese gives it a creamier texture. One of my favorite fall recipes. Goes great with either cornbread or tortilla chips. Hope you like it!

Ingredients For white bean chicken chili

  • 4 c
    shredded white chicken, cooked
  • 1 lb
    great northern beans, dry
  • 2 can
    chicken broth, non-fat
  • 7 oz
    can diced green chilis
  • 1 can
    white shoepeg corn
  • 1 md
    onion,diced
  • 8 oz
    cream cheese, low-fat, softened
  • 2 Tbsp
    garlic powder
  • 1 Tbsp
    oregano, dried
  • 2 tsp
    ground cumin
  • 1 tsp
    white pepper
  • 1/2 tsp
    black pepper
  • GARNISH
  • sour cream, lite
  • monterey jack cheese
  • cilantro, fresh

How To Make white bean chicken chili

  • 1
    Cover beans with water in crockpot. Soak over night. When ready to cook, drain and rinse beans. Return to crockpot.

    Add broth, onion, chilis, corn, and seasoning plus enough water just enough to cover beans. (More may be added later if needed during cooking process.)

    Cook in crockpot on high approx 6 hours or until beans are tender. Reduce heat and dollop softened cream cheese into soup. Stir until melted and mixed through.

    Serve and garnish with sour cream, shredded jack cheese, and/or cilantro(opt). If desired, top with tortilla chips
