This is a delicious version of White Bean chili. Very flavorful and the cream cheese gives it a creamier texture. One of my favorite fall recipes. Goes great with either cornbread or tortilla chips. Hope you like it!

Ingredients

shredded white chicken, cooked
1 lb
great northern beans, dry
2 can(s)
chicken broth, non-fat
7 oz
can diced green chilis
1 can(s)
white shoepeg corn
1 medium
onion,diced
8 oz
cream cheese, low-fat, softened
2 Tbsp
garlic powder
1 Tbsp
oregano, dried
2 tsp
ground cumin
1 tsp
white pepper
1/2 tsp
black pepper

GARNISH

sour cream, lite
monterey jack cheese
cilantro, fresh

How to Make White Bean Chicken Chili

Step-by-Step

  • 1Cover beans with water in crockpot. Soak over night.

    When ready to cook, drain and rinse beans. Return to crockpot.
  • 2Add broth, onion, chilis, corn, and seasoning plus enough water just enough to cover beans. (More may be added later if needed during cooking process.)
  • 3Cook in crockpot on high approx 6 hours or until beans are tender. Reduce heat and dollop softened cream cheese into soup. Stir until melted and mixed through.
  • 4Serve and garnish with sour cream, shredded jack cheese, and/or cilantro(opt). If desired, top with tortilla chips
