Ingredients
- 3 stalks green onion, white and green parts minced and separated
- 1 teaspoon Chinese 5 spice
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons sugar, divided
- salt and pepper
- 2 chicken thighs
- 1 tablespoon vegetable oil
- 1 tablespoon honey
- 2 teaspoons rice vinegar
- 2 cups prepared sticky rice
- 1 cucumber, sliced
- 1 large tomato, sliced into quarters

Step 1In a ziplock bag, place the white parts of the green onion, the Chinese 5 spice, garlic, soy sauce, 1 Tbsp of sugar, salt and pepper. Score the chicken thighs and add to the marinade. Marinade for at least an hour or overnight.

Step 2Preheat the oven 375 degrees F. Remove the chicken from the marinade and discard the marinade. Place the chicken on a foil lined baking sheet and roast for 30 minutes.

Step 3Meanwhile, place the green parts of the green onion in a bowl. Add some salt, the remaining sugar, and oil, and microwave for 20 seconds. Mix the honey with the vinegar. Remove the chicken from the oven and pour the honey vinegar over the skin.

Step 4Serve the scallion oil over the top of the sticky rice. Season the cucumber and tomato with salt and pepper. Serve along side the chicken and rice.
