Ingredients

  • 4 boneless skinless chicken thighs
  • 8 cups chicken stock
  • 1 small shallot cut in half
  • 1 1 inch knob of ginger
  • 6 cloves garlic minced
  • 1 tablespoon fish sauce
  • 9.6 ounces package of glass noodles
  • 1 cup red cabbage chopped
  • 4 scallions chopped
  • fresh cilantro for garnish
  • fried shallots for garnish

How To Make vietnamese chicken and glass noodle soup

  • Step 1
    Place the chicken stock in a pot and add the chicken thighs, the shallot, ginger and garlic. Cook until the chicken is no longer pink. Remove the chicken to cutting board. Strain out the stock through a fine mesh strainer discarding the solids.
  • Step 2
    Place the stock back on the stove and add the fish sauce, glass noodles, cabbage and scallions. Cook until the glass noodles are done About 5 minutes. Cut the chicken into pieces and add back to pot. Cook until chicken is warmed through
  • Step 3
    Serve garnished with cilantro and fried shallots
