Ingredients
- 4 boneless skinless chicken thighs
- 8 cups chicken stock
- 1 small shallot cut in half
- 1 1 inch knob of ginger
- 6 cloves garlic minced
- 1 tablespoon fish sauce
- 9.6 ounces package of glass noodles
- 1 cup red cabbage chopped
- 4 scallions chopped
- fresh cilantro for garnish
- fried shallots for garnish
How To Make vietnamese chicken and glass noodle soup

Step 1Place the chicken stock in a pot and add the chicken thighs, the shallot, ginger and garlic. Cook until the chicken is no longer pink. Remove the chicken to cutting board. Strain out the stock through a fine mesh strainer discarding the solids.

Step 2Place the stock back on the stove and add the fish sauce, glass noodles, cabbage and scallions. Cook until the glass noodles are done About 5 minutes. Cut the chicken into pieces and add back to pot. Cook until chicken is warmed through

Step 3Serve garnished with cilantro and fried shallots
