Ingredients
- 4 - chicken thighs deboned
- 2 tablespoons oil
- 4 cloves garlic minced
- 1 - jalapeno seeded and diced
- CARAMEL SAUCE
- 2 tablespoons fish sauce
- 6 tablespoons water
- 1 tablespoon sugar
- 2 tablespoons rice vinegar
How To Make vietnamese caramel chicken

Step 1Mix all ingredients for caramel sauce in a bowl and set aside.

Step 2Add oil to a cast iron skillet or any skillet. Place on medium to high heat until starts to smoke. Place chicken skin side down and cook until crispy. Turn chicken and cook until crispy on back. Add the garlic and continue to cook about 1 minute. Pour the caramel sauce over the chicken. Lower the heat and simmer until the sauce reduces and becomes amber in color.

Step 3Add the jalapenos and cook another minute. Serve immediately.
