  • 1 - egg white
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 pound chicken breast or boneless skinless chicken thighs cut into pieces
  • 8 cups water
  • 1 tablespoon peanut oil

How To Make velveting chicken chinese style

  • Step 1
    Mix the egg white, rice vinegar, cornstarch, and peanut oil together. Add the chicken and cover and marinate in the fridge for 30 to 45 minutes.
  • Step 2
    Bring the water and salt to a boil. Reduce heat to a simmer. Pour off the excess marinade and place the chicken in the water. Cook 1 minute drain
  • Step 3
    store in fridge until ready to use.
