Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 can chicken broth (14 1/2 oz)
  • 2 cups instant white or brown rice, uncooked.
  • 1/2 pound velveeta pasteurized prepared cheese product, cut into 1/2-inch cubes
  • 1 package frozen chopped broccoli, thawed

  • Step 1
    Cook and stir chicken in large nonstick skillet on medium-high heat 5 min or until done.
  • Step 2
    Stir in broth.
  • Step 3
    Bring to boil.
  • Step 4
    Add rice, Velveeta and broccoli; cover.
  • Step 5
    Remove from heat.
  • Step 6
    Let stand 10 min.
  • Step 7
    Stir until Velveeta is completely melted and mixture is well blended.
  • Step 8
    Shortcut: To quick-thaw frozen broccoli, microwave for about half the cooking time specified on package.
