Ingredients
- 1 1/2 pounds chicken pieces
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup mayonnaise, light
- 1 large egg, slightly beaten
- 1/2 teaspoon tabasco (or more to taste - i used about 1 tsp)
- 1 1/4 cups corn flakes cereal, crushed or shake n bake
How To Make spicy "un-fried" chicken

Step 1Preheat the oven to 375 degrees F. Spray a large shallow baking pan with nonstick spray.

Step 2In a small bowl, mix garlic powder, salt, pepper & cayenne; mix well.

Step 3Sprinkle the chicken with the garlic/pepper mixture & rub it into the chicken, let sit for 5 minutes.

Step 4In a large bowl, combine the mayonnaise, egg & hot sauce. Add the chicken; toss to coat.

Step 5Place the cereal crumbs (or shake n bake) on a sheet of wax paper. Dip the chicken into the crumbs pressing so the crumbs adhere.

Step 6Place the chicken in the pan and lightly spray with nonstick spray.

Step 7Bake until the chicken is golden brown & cooked through, 40 – 45 minutes. Do not turn.
