Ingredients
- 4 medium chicken breast halves, skinless and boneless
- 1/2 cup dried cranberries
- 1/2 cup walnut or pecan pieces
- 1/4 cup chopped celery
- 4 tablespoons mayonnaise, light
- 1/2 bunch green onions (optional)
- pinch salt and pepper
- - sliced french bread
How To Make ultimate chicken salad sandwich

Step 1Bake chicken breast at 375 for approximately 30-40 minutes or until done. Remove from oven and cool.Chop chicken breast into tiny pieces.

Step 2Mix chicken pieces, walnuts, cranberries, celery, onion, salt, pepper and mayo in medium bowl.

Step 3Prepare as a sandwich onto the bread of your choice. You may add or subtract ingredients to your liking. I have also added seedless grapes or a piece of cheese. Goes well with a bowl of soup.
