I found this on the Kraft recipe site and it has become a real family fave. It's definitely not waist-line friendly, but oooooo so good. Extra sauce and pasta on the side is awesome...

Ingredients

  • 4 small chicken breast halves, skinless and boneless
  • 1 8 ounce packages cream cheese, cubed
  • 1/2 cup water
  • 1/2 cup pesto
  • 4 cups grape or cherry tomatoes
  • 1 cup italian cheese, shredded

How To Make tuscan chicken simmer

  • Step 1
    Heat large nonstick skillet sprayed with cooking spray on med-high heat. Add chicken;cover chicken with lid. Cook 5-7 minutes on each side or until chicken is cooked through (165°). Remove chicken from skillet;keep warm.
  • Step 2
    Reduce heat to medium. Add cream cheese, water, pesto, and tomatoes to skillet. Cook uncovered 2 minutes or until sauce is creamy and smooth.
  • Step 3
    Return chicken to skillet. Cook and stir 1 minute or until chicken is coated and heated through. Sprinkle with shredded cheese.
