Ingredients
- 1 tablespoon olive oil, extra virgin
- 1 jar mushrooms, drained
- 1 1/2 teaspoons minced garlic
- 1 cup chicken broth
- 3/4 cup baby spinach, chopped
- 1/2 cup white quinoa
- 1 cup turkey or chicken breast, already cooked
- 1/2 teaspoon ground rosemary
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon Adobo powder
- 1/4 teaspoon salt
How To Make turkey or chicken spinach mushroom quinoa skillet

Step 1Add olive oil, mushrooms, and garlic to a skillet and saute until heated through.

Step 2Add chicken broth, spinach, and quinoa. After it begins to boil, lower heat and simmer covered for 10 minutes.

Step 3Cut turkey or chicken into bite-size pieces.

Step 4Sprinkle the chicken or turkey with ground rosemary, smoked paprika, salt, and Adobo powder.

Step 5Remove lid of skillet and add the turkey or chicken. Gently stir into quinoa mixture.

Step 6Cover and let simmer for about 10 minutes longer or until the turkey or chicken is warm and quinoa is done.
