Delicious, husband-approved healthy dish for two. It is very flavorful, filling, and easy. I served it with warmed cinnamon peaches.

Ingredients For turkey or chicken spinach mushroom quinoa skillet

  • 1 Tbsp
    olive oil, extra virgin
  • 1 jar
    mushrooms, drained
  • 1 1/2 tsp
    minced garlic
  • 1 c
    chicken broth
  • 3/4 c
    baby spinach, chopped
  • 1/2 c
    white quinoa
  • 1 c
    turkey or chicken breast, already cooked
  • 1/2 tsp
    ground rosemary
  • 1/2 tsp
    smoked paprika
  • 1/2 tsp
    Adobo powder
  • 1/4 tsp
    salt

How To Make turkey or chicken spinach mushroom quinoa skillet

    Add olive oil, mushrooms, and garlic to a skillet and saute until heated through.

    Add chicken broth, spinach, and quinoa. After it begins to boil, lower heat and simmer covered for 10 minutes.

    Cut turkey or chicken into bite-size pieces.

    Sprinkle the chicken or turkey with ground rosemary, smoked paprika, salt, and Adobo powder.

    Remove lid of skillet and add the turkey or chicken. Gently stir into quinoa mixture.

    Cover and let simmer for about 10 minutes longer or until the turkey or chicken is warm and quinoa is done.
