Have too much turkey at Thanksgiving? I always do--and this is a good way to use it up. It is equally good with chicken. If you want, you can replace the 3 medium tomatoes with a large can of diced tomatoes.

fresh, sliced mushrooms (about 11 large)
1/2 c
coarsely chopped onion
1/4 c
2 tsp
fresh lemon juice (about half of a lemon)
1 c
coarsely chopped green pepper
1/2 c
sliced celery
2 c
chopped tomatoes (about 3 medium)
2 Tbsp
1 1/2 c
chicken (or turkey) stock
1/4 c
white wine
2 c
cooked turkey or chicken, diced
1 tsp
salt (optional)
1/8 tsp

How to Make Turkey or Chicken Creole


  • 1Saute mushrooms and onions in margarine and lemon juice until onions are translucent and soft.
  • 2Add remaining veggies and cook until tender--about 5 minutes.
  • 3In a small bowl, combine flour and stock until mixture is smooth and add to veggies.
  • 4Add wine and cook until soft until sauce begins to thicken, stirring occasionally.
  • 5Add remaining ingredients and heat through.
  • 6Serve over rice or noodles.
