turkey or chicken creole

Have too much turkey at Thanksgiving? I always do--and this is a good way to use it up. It is equally good with chicken. If you want, you can replace the 3 medium tomatoes with a large can of diced tomatoes.

Ingredients
- 2 1/2 cups fresh, sliced mushrooms (about 11 large)
- 1/2 cup coarsely chopped onion
- 1/4 cup margarine
- 2 teaspoons fresh lemon juice (about half of a lemon)
- 1 cup coarsely chopped green pepper
- 1/2 cup sliced celery
- 2 cups chopped tomatoes (about 3 medium)
- 2 tablespoons flour
- 1 1/2 cups chicken (or turkey) stock
- 1/4 cup white wine
- 2 cups cooked turkey or chicken, diced
- 1 teaspoon salt (optional)
- 1/8 teaspoon pepper
How To Make turkey or chicken creole

Step 1Saute mushrooms and onions in margarine and lemon juice until onions are translucent and soft.

Step 2Add remaining veggies and cook until tender--about 5 minutes.

Step 3In a small bowl, combine flour and stock until mixture is smooth and add to veggies.

Step 4Add wine and cook until soft until sauce begins to thicken, stirring occasionally.

Step 5Add remaining ingredients and heat through.

Step 6Serve over rice or noodles.
