turkey or chicken creole

Have too much turkey at Thanksgiving? I always do--and this is a good way to use it up. It is equally good with chicken. If you want, you can replace the 3 medium tomatoes with a large can of diced tomatoes.

Ingredients

  • 2 1/2 cups fresh, sliced mushrooms (about 11 large)
  • 1/2 cup coarsely chopped onion
  • 1/4 cup margarine
  • 2 teaspoons fresh lemon juice (about half of a lemon)
  • 1 cup coarsely chopped green pepper
  • 1/2 cup sliced celery
  • 2 cups chopped tomatoes (about 3 medium)
  • 2 tablespoons flour
  • 1 1/2 cups chicken (or turkey) stock
  • 1/4 cup white wine
  • 2 cups cooked turkey or chicken, diced
  • 1 teaspoon salt (optional)
  • 1/8 teaspoon pepper

How To Make turkey or chicken creole

  • Step 1
    Saute mushrooms and onions in margarine and lemon juice until onions are translucent and soft.
  • Step 2
    Add remaining veggies and cook until tender--about 5 minutes.
  • Step 3
    In a small bowl, combine flour and stock until mixture is smooth and add to veggies.
  • Step 4
    Add wine and cook until soft until sauce begins to thicken, stirring occasionally.
  • Step 5
    Add remaining ingredients and heat through.
  • Step 6
    Serve over rice or noodles.
