Ingredients
- 3/4 pound thick sliced turkey from the deli (great if you have left over turkey)
- 8-10 slices bread
- 1/4 cup chopped onion
- 3 tablespoons butter
- 1/2-1 teaspoon poultry seasoning
- 1 jar turkey gravy
- 1/4-1/2 cup water
- 1/2 cup bread crumbs
- 1/4 cup club crackers, crushed
- 1/2 cup chicken breading mix ( i use martha washington)
How To Make turkey croquettes

Step 1Melt butter in pan over med low heat, add onion and saute til soft, add 3 tblspn of the gravy and the waterand 1/4 tsp of poultry seasoning and simmer.

Step 2Break bread up into pieces and mix rest of poultry seasoning, add 1/4 of chicken breading mix. Mix the turkey in the bread add the onion mixture and mix together.

Step 3In a med size bowl add bread crumbs, chicken breading mix and crushed crackers. Use an ice cream scoop and scoop a ball of turkey croquette mix and roll until ball is covered. Take the croquettes and refrigerate 1/2 hr. (I like to put mine in the freezer for an hour or so)

Step 4Preheat oven to 350, bake on a greased cookie sheet for 30 minutes until golden and crispy. Heat the rest of gravy to serve with the croquettes.
