Ingredients
- 1 - whole cut up chicken, 6 pieces plus wings or boneless skinless chicken of choice
- gallon - water
- 1/4 cup salt
- 2 cups buttermilk
- 1 - egg
- 3 cups all purpose flour
- 1 teaspoon crushed/ ground black pepper
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon thyme, dried
- 1/8 teaspoon basil, dried
- 1/8 teaspoon oregano, dried
- 1/8 teaspoon coriander
- 2-3 - inches of shortening or canola oil in heavy skillet

Step 1pour water and 1/4 cup salt into large metal or glass bowl, soak chicken for at least 3 hours.

Step 2take chicken out of brine and dry on clean cooking cloth or paper towels

Step 3pre-heat oil or shortening in large/heavy metal fry pan to 350 degrees.

Step 4beat egg in buttermilk

Step 5mix all dry ingredients in gallon size zip lock bag and shake well

Step 6dredge dry chicken in flour mixture starting with large pieces.

Step 7then dip into buttermilk/egg mixture let excess drip off

Step 8dredge chicken in flour mixture again and gently place into pan of 350 degree oil or shortening

Step 9cook 6 -12 minutes per side or until juices run clear drain on rack for a few minutes and serve. Cook few pieces at a time and be sure all are relative in size.
