Ingredients
- 1 pineapple peeled, cored and small diced (divided)
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 2 boneless skinless chicken breasts
- 3 cups cauliflower florets
- 1 tablespoon avocado oil
- 1/2 cup sliced red onion
- 1/2 cup orange juice
- GARNISHES
- sweet coconut flakes
- sweet chili sauce
- fresh cilantro chopped
How To Make tropical chicken over pineapple cauliflower rice

Step 1Place half the pineapple in a food processor add the salt, lime juice, and red pepper flakes. place the chicken breasts in a dish and pour the pineapple mixture over top and let marinate in the fridge for 1 to 3 hours.

Step 2Rinse out the food processor and add the cauliflower florets and pulse to a course rice like texture

Step 3Place the oil in a skillet over medium high heat. Add the red onion and saute for 3 minutes. Add the cauliflower rice, orange juice and remaining pineapple. Saute about 5 minutes. Keep warm

Step 4Remove the chicken from the marinade and grill or broil until no longer pink. Slice

Step 5Plate the cauliflower rice and top with the chicken breast and garnish with coconut, Sweet chili sauce and cilantro
