tropical chicken bake
This one was very interesting...the bananas seemed a bit weird to put in here, but it ended up working much better than I expected. Everyone had seconds, and it was pretty simple to put together. The only time consuming part was getting the sweet potatoes ready and cooked. use canned yams to save time. totally worth trying, we'll definitely have it again :) On a side note, next time I think I'll throw in some brown rice to serve it over.

Ingredients
- 8 - chicken thighs, skinless and boneless (or substitute chicken breasts)
- 2 tablespoons butter
- 6 medium sweet potatoes (cooked, peeled, and quartered)
- 4 - bananas, sliced
- 2 cans (11 oz each) mandarin oranges, drained
- 2 cans (8 oz each) crushed pineapple (pineapple chunks are ok too)
- 20 ounces sweet and sour sauce
- 2/3 cup chopped almonds (i used pecans...walnuts are ok too)
How To Make tropical chicken bake

Step 1In large skillet, cook chicken in butter. I actually cut the chicken into lg. bite size pieces instead of keeping them whole. Either way works fine.

Step 2In ungreased 9x13 baking dish, mix sweet potatoes, bananas, oranges and pineapple.

Step 3top with chicken

Step 4pour sweet and sour over the top

Step 5sprinkle with nuts

Step 6bake uncovered 350 25-30 min
