I LOVE BBQ chicken, but I wanted something a little zingy. So, out with the slow cooker book again. This one was a HUGE hit at my Grandma B's house and I only adjusted the original recipe... a bit.

Ingredients

  • ·
    6 boneless, skinless chicken breast halves
  • ·
    1 (15oz) can of pineapple tidbits, juice reserved (or whatever kind of pineapple you have)
  • ·
    3/4 cup ketchup
  • ·
    1/2 cup orange juice
  • ·
    1/4 cup packed brown sugar
  • ·
    1/4 cup red wine vinegar
  • ·
    1/4 cup olive oil
  • ·
    4 teaspoons minced fresh parsley
  • ·
    2 teaspoons worcestershire sauce
  • ·
    1 teaspoon garlic salt
  • ·
    1/2 teaspoon pepper
  • ·
    2 tablespoons plus 2 teaspoos cornstarch
  • ·
    1/4 cup pineapple juice

How to Make Tropical BBQ Slow Cooker Chicken

Step-by-Step

  1. Spray crock-pot with cooking spray, place chicken in bottom of pot. Add pineapple tidbits over chicken.
  2. In a small bowl, combine ketchup, orange juice, brown sugar, vinegar, oil parsley, Worcestershire sauce, garlic salt, and pepper; pour over chicken. Cover and cook on low for 5-6 hours.
  3. Remove chicken from a serving platter; keep warm. Skim fat from the cooking juices; transfer 2 cups to a small saucepan. Bring the liquid to a boil.
  4. In a small bowl, combine cornstarch and pineapple juice until smooth. Gradually stir into the pan of cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken.
