I LOVE BBQ chicken, but I wanted something a little zingy. So, out with the slow cooker book again. This one was a HUGE hit at my Grandma B's house and I only adjusted the original recipe... a bit.

Ingredients

  • - 6 boneless, skinless chicken breast halves
  • - 1 (15oz) can of pineapple tidbits, juice reserved (or whatever kind of pineapple you have)
  • - 3/4 cup ketchup
  • - 1/2 cup orange juice
  • - 1/4 cup packed brown sugar
  • - 1/4 cup red wine vinegar
  • - 1/4 cup olive oil
  • - 4 teaspoons minced fresh parsley
  • - 2 teaspoons worcestershire sauce
  • - 1 teaspoon garlic salt
  • - 1/2 teaspoon pepper
  • - 2 tablespoons plus 2 teaspoos cornstarch
  • - 1/4 cup pineapple juice

How To Make tropical bbq slow cooker chicken

  • Step 1
    Spray crock-pot with cooking spray, place chicken in bottom of pot. Add pineapple tidbits over chicken.
  • Step 2
    In a small bowl, combine ketchup, orange juice, brown sugar, vinegar, oil parsley, Worcestershire sauce, garlic salt, and pepper; pour over chicken. Cover and cook on low for 5-6 hours.
  • Step 3
    Remove chicken from a serving platter; keep warm. Skim fat from the cooking juices; transfer 2 cups to a small saucepan. Bring the liquid to a boil.
  • Step 4
    In a small bowl, combine cornstarch and pineapple juice until smooth. Gradually stir into the pan of cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken.
