Ingredients
- FOR THE TOM YUM SAUCE
- 2 tablespoons lemongrass paste
- 6 cloves garlic
- 1 1/2 inch ginger peeled
- 2 tablespoons tom yum paste
- 1 medium lime juiced and zest
- 5 scallions white parts only
- 2 tablespoons shrimp paste
- 2 tablespoons fish sauce
- 1/2 cup cilantro chopped
- 3 tablespoons peanut oil
- 1/2 cup brown sugar
- FOR THE CHICKEN
- 6 chicken thighs bone in
- cilantro for garnish
How To Make tom yum chicken thighs

Step 1Preheat oven 350 degrees. Spray a baking pan with cooking spray. Add the 6 chicken thighs in the pan skin side up. Season with salt and pepper. Place in oven. Bake for 20 minutes.

Step 2Meanwhile place all ingredients for tom yum sauce in food processor and process until everything is finely chopped and well mixed.

Step 3After the chicken has baked 20 minutes slather the sauce all over the top of the chicken. Return to oven and bake another 10 to 15 minutes.

Step 4Garnish with cilantro
