tina's calico chicken

This is my version of a one-pot recipe I found online a few years ago, and I most often make it on camping trips, which is why I use canned ingredients (ease of transporting). It's a huge hit with the family, served with either tortilla strips or with cornbread.

Ingredients
- 6 - chicken breast halves, boneless, skinless, diced
- 1 package taco seasoning
- 8 ounces pepper jack cheese, diced
- 4 ounces can of diced green chiles
- 1 stick butter
- 1/2 cup diced green onion
- 2 cans mexicorn
- 1 can black beans
- 1 can diced tomatoes
How To Make tina's calico chicken

Step 1In a dutch oven, melt the butter over medium-high heat, and brown the chicken until the pink is gone.

Step 2Once the chicken is cooked, stir in the taco seasoning and coat the chicken well. Add all the other ingredients EXCEPT the cheese. Simmer over medium-low heat for approximately 1 hour, stirring occasionally. During the last 5 minutes of cooking, drop in the cheeese, mix lightly and let the cheese melt before serving.
