This is my version of a one-pot recipe I found online a few years ago, and I most often make it on camping trips, which is why I use canned ingredients (ease of transporting). It's a huge hit with the family, served with either tortilla strips or with cornbread.

    chicken breast halves, boneless, skinless, diced
  • 1 pkg
    taco seasoning
  • 8 oz
    pepper jack cheese, diced
  • 4 oz
    can of diced green chiles
  • 1 stick
  • 1/2 c
    diced green onion
  • 2 can(s)
  • 1 can(s)
    black beans
  • 1 can(s)
    diced tomatoes

How to Make Tina's Calico Chicken


  1. In a dutch oven, melt the butter over medium-high heat, and brown the chicken until the pink is gone.
  2. Once the chicken is cooked, stir in the taco seasoning and coat the chicken well. Add all the other ingredients EXCEPT the cheese. Simmer over medium-low heat for approximately 1 hour, stirring occasionally. During the last 5 minutes of cooking, drop in the cheeese, mix lightly and let the cheese melt before serving.
