1 pkgtaco seasoning
8 ozpepper jack cheese, diced
4 ozcan of diced green chiles
1/2 cdiced green onion
1 can(s)black beans
1 can(s)diced tomatoes
How to Make Tina's Calico Chicken
- In a dutch oven, melt the butter over medium-high heat, and brown the chicken until the pink is gone.
- Once the chicken is cooked, stir in the taco seasoning and coat the chicken well. Add all the other ingredients EXCEPT the cheese. Simmer over medium-low heat for approximately 1 hour, stirring occasionally. During the last 5 minutes of cooking, drop in the cheeese, mix lightly and let the cheese melt before serving.
