This is my version of a one-pot recipe I found online a few years ago, and I most often make it on camping trips, which is why I use canned ingredients (ease of transporting). It's a huge hit with the family, served with either tortilla strips or with cornbread.

chicken breast halves, boneless, skinless, diced

taco seasoning
8 oz
pepper jack cheese, diced
4 oz
can of diced green chiles
1 stick
1/2 c
diced green onion
2 can(s)
1 can(s)
black beans
1 can(s)
diced tomatoes

How to Make Tina's Calico Chicken


  • 1In a dutch oven, melt the butter over medium-high heat, and brown the chicken until the pink is gone.
  • 2Once the chicken is cooked, stir in the taco seasoning and coat the chicken well. Add all the other ingredients EXCEPT the cheese. Simmer over medium-low heat for approximately 1 hour, stirring occasionally. During the last 5 minutes of cooking, drop in the cheeese, mix lightly and let the cheese melt before serving.
