tina's calico chicken

This is my version of a one-pot recipe I found online a few years ago, and I most often make it on camping trips, which is why I use canned ingredients (ease of transporting). It's a huge hit with the family, served with either tortilla strips or with cornbread.

Ingredients

  • 6 - chicken breast halves, boneless, skinless, diced
  • 1 package taco seasoning
  • 8 ounces pepper jack cheese, diced
  • 4 ounces can of diced green chiles
  • 1 stick butter
  • 1/2 cup diced green onion
  • 2 cans mexicorn
  • 1 can black beans
  • 1 can diced tomatoes

How To Make tina's calico chicken

  • Step 1
    In a dutch oven, melt the butter over medium-high heat, and brown the chicken until the pink is gone.
  • Step 2
    Once the chicken is cooked, stir in the taco seasoning and coat the chicken well. Add all the other ingredients EXCEPT the cheese. Simmer over medium-low heat for approximately 1 hour, stirring occasionally. During the last 5 minutes of cooking, drop in the cheeese, mix lightly and let the cheese melt before serving.
