Ingredients
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 3 tablespoons butter, room temperature
- 1 can cream of chicken soup (regular or fat free, your choice)
- 8 ounces can sliced drained mushrooms
- 2 ounces jar pimientos
- 1/2 teaspoon basil, dried
- 8 ounces pkg, noodles(any kind) cooked & drained
- 3 cups diced cooked chicken
- 2 cups ricotta or cottage cheese (your choice & low fat/non fat if preferred)
- 2 cups shredded cheddar (low/non fat, your choice)
- 1/2 cup parmesan cheese
- 1/4 cup buttered bread crumbs
How To Make three cheese chicken bake

Step 1Oven preheated to 350 degrees. Grease a 13x9 pan.

Step 2In a skillet, saute onion & green pepper in the butter. Remove; stir in soup, drained mushrooms, pimientos & basil; set aside.

Step 3In a large bowl, combine noodles, chicken, ricotta or cottage cheese, shredded cheddar & parmesan cheese; mix well.

Step 4Then add the sauce mixture to the noodle mixture and mix well.

Step 5Transfer to the greased 13x9 pan and bake uncovered for 40-45 minutes or until bubbly.

Step 6Remove and sprinkle with bread crumbs; Bake 15 minutes longer.

Step 7*For the buttered bread crumbs, I honestly believe I used just the Italian Bread Crumbs and it was good that way!
