The Ultimate Pan-Fried Chicken or Pork Sandwich

bacon, thickly sliced
flour, all purpose variety
salt, kosher variety, to taste
black pepper, freshly ground, to taste
chicken breast, boneless, skinless or boneless pork loin
sweet butter, unsalted, melted
rustic bread, thickly sliced
lettuce, i’m using frisée
ripe tomato, sliced
favorite sauce or dressing
How to Make The Ultimate Pan-Fried Chicken or Pork Sandwich
2Gather your ingredients (oops forgot the image… my bad).
3Cook the bacon in a sauté pan over medium heat until crispy.
4Remove the bacon and reserve.
5Add the flour, salt, pepper, cumin, cayenne, and paprika to a small bowl.
6Add the chicken or pork to the mixture, and thoroughly coat.
7Place the chicken or pork in the pan with the bacon grease, and cook over medium heat until browned and toasty, about 5 minutes per side.
8Chef's Note: Remove from the pan, and slice into thick pieces.
9Brush the melted butter on both sides of the bread and toast in the same pan that you used to cook the bacon, and the chicken.
11Spread a generous amount of your favorite sauce to one side of each piece of the toasted bread.
12Chef's Note: This is the sauce I use:
13Place the cooked chicken, or pork on one slice of the bread.
14Add the provolone cheese.
15Pop under the broiler until the cheese melts over the chicken, or pork and the bread.
20Top with other slice of toasted bread, and cut in half.
22Serve with some chips, or fries, and beverage of choice. Enjoy.
23Keep the faith, and keep cooking.
