1Chop the chicken into bite size pieces. Mix the next six ingredients together and pour over chicken pieces and let marinated 2 hours.
2In large pot add a little oil and saute the scallions and onion for 2 minutes. Add the water, seasoning packets from ramen packages, sake, fish sauce, Thai sweet chili, and ginger paste. Bring to a boil and reduce to a simmer and simmer 10 minutes.
3Meanwhile place the chicken with the marinade in a non stick pan. Cook until chicken begins to cook and sauce is thickened. Remove from heat. Add to the ramen water. Bring back to a boil and add noodles. Cook for 4 minutes. Serve
