I fell in love with Thai cuisine when an exchange student from Hong Kong took us to our first Thai restaurant. I think the marriage of the best of Chinese with the best of Indian is the culmination of Thai. I love food from around the world and Thai is definitely one of my most favorite.

Ingredients
- 1 pound linguini
- - kosher salt to taste
- 2-3 quarts water
- 1 1/2 pounds large shrimp, cleaned and deveined
- 1/2 cup creamy peanut butter
- 1/2 cup soy sauce, low sodium
- 1/2 cup chicken broth
- 2 tablespoons honey
- 1 tablespoon lime juice
- 2 teaspoons crushed red pepper flakes
- 1 1/2 teaspoons cornstarch
- 1/2 cup chopped green onions
- 1-2 tablespoon canola oil
How To Make thai peanut shrimp and linguini

Step 1Cook linguini in boiling salted water according to package instructions.

Step 2Saute` shrimp in a little oil, just until they turn pink.

Step 3Combine peanut butter, soy sauce, chicken broth, honey, lime juice, red pepper flakes and cornstarch in s saucepan and mix well. Cook stirring constantly, for 5 minutes or until thickened.

Step 4Toss the shrimp, hot linguini, and sauce with green onions in a bowl. Spoon onto a serving platter and enjoy.
