I fell in love with Thai cuisine when an exchange student from Hong Kong took us to our first Thai restaurant. I think the marriage of the best of Chinese with the best of Indian is the culmination of Thai.

I love food from around the world and Thai is definitely one of my most favorite.

kosher salt to taste
2-3 qt
1 1/2 lb
large shrimp, cleaned and deveined
1/2 c
creamy peanut butter
1/2 c
soy sauce, low sodium
1/2 c
chicken broth
2 Tbsp
1 Tbsp
lime juice
2 tsp
crushed red pepper flakes
1 1/2 tsp
1/2 c
chopped green onions
1-2 Tbsp
canola oil

How to Make Thai Peanut Shrimp and Linguini


  • 1Cook linguini in boiling salted water according to package instructions.
  • 2Saute` shrimp in a little oil, just until they turn pink.
  • 3Combine peanut butter, soy sauce, chicken broth, honey, lime juice, red pepper flakes and cornstarch in s saucepan and mix well. Cook stirring constantly, for 5 minutes or until thickened.
  • 4Toss the shrimp, hot linguini, and sauce with green onions in a bowl. Spoon onto a serving platter and enjoy.
