    cooking spray
  • 1 medium
    onion
  • 1 small
    zucchini
  • 1 small
    red pepper
  • 2 tsp
    green curry paste
  • 2 c
    thinly sliced roasted chicken breast
  • 1 c
    fat-free, less sodium chicken broth
  • 2/3 c
    light coconut milk
  • 3 Tbsp
    fresh cilantro leaves
  • 1 small
    eggplant (optional)

How to Make thai green curry chicken

Step-by-Step

  1. heat a large nonstick skillet over medium-high heat. coat pan with cooking spray. add onion; saute 5 minutes. add zucchini and bell pepper; saute 3 minutes. stir in curry paste. add chicken, broth, and coconut milk to pan; bring to a boil. reduce heat, and simmer 3 minutes. spoon into bowls; sprinkle with cilantro.
