I made this. very tasty. I didn't have creamy peanut butter. I used Jif extra crunchy and it worked great. For the diced tomatoes, I used Rotel the hot one. This was a very good dish. Forgot to take a picture of it.

- 1 medium onion thinly sliced
- 2 1/2 pounds chicken
- 1 large sliced red bell peppers
- 14 1/2 ounces can petite diced tomatoes with zesty jalapenos
- 1/3 cup creamy peanut butter
- 2 tablespoons fresh lime juice
- 2 tablespoons reduced sodium soy sauce
- 1/2 teaspoon ground ginger
- 8 ounces fresh snow peas

Step 1Place onion and chicken in a 4 quart or larger slow cooker. Layer with bell pepper. In a medium bowl, combine tomatoes, peanut butter, lime juice, soy sauce, and ginger: mix well. Pour over chicken. cover and cook on low 7-8 hours until chicken is tender. Stir in snow peas: cook 15 min. or until the peas are crisp tender.
