Ingredients

  • 1 c
    salsa
  • 1/4 c
    creamy peanut butter
  • 2 Tbsp
    orange juice
  • 2 Tbsp
    honey
  • 1 tsp
    soy sauce
  • 8 oz
    uncooked fettuccine
  • 3/4 lb
    boneless, skinless, chicken breatst, cut into strips
  • 1 Tbsp
    olive oil
  • 1 medium
    sweet red pepper, julienned
  • 1/4 c
    fresh cilantro, minced

How to Make Thai Chicken Fettuccine

Step-by-Step

  1. For sauce, in a microwave-safe bowl, combine the first five ingredients. Cover and microwave on high for 1 minute; stir. Set aside
  2. Cook fettuccine according to package directions. Meanwhile, in a large skillet, cook chicken in olive oil over medium heat for 3-5 minutes or until browned. Add red pepper, cook and stir until crisp-tender.
  3. Drain fettuccine; top with the chicken mixture and sauce. Sprinkle with cilantro.
