  • TERIYAKI MARINADE
  • 4 tablespoons soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • 2 tablespoons sugar
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • BOWL
  • 2 large boneless skinless chicken breasts or thighs
  • 4 cups cooked sushi rice
  • 2 green parts of scallion, chopped
  • 1 cucumber, cut into sticks
  • Kewpie mayo
  • sweet chili sauce
  • furikake

How To Make teriyaki chicken sushi bowl

  • Step 1
    Mix the ingredients for the marinade together. Cut the chicken into cubes. Place the chicken in the marinade and marinate for at least 4 hours.
  • Step 2
    Remove the chicken from the marinade and place in a pan. Cook, brushing with the marinade, about 6 to 10 minutes.
  • Step 3
    Place 1 cup of sushi rice onto each plate. Top with the chicken, scallion, cucumber, mayo, sweet chili sauce, and furikake.
