4 - 64 - 5 ounce boneless chicken breasts
1 1/4 cflour
1/2 tspsalt & pepper
About30 saltine crackers, crushed fine
1/2 tspbaking powder
3/4 tspgarlic powder
1/3 chot sauce
How to Make ~ Tender Fried Cracker Crumb Chicken Filets ~
- Have three shallow dishes ready. Into one place about 1/2 cup flour. In another add 3/4 cup flour, cracker crumbs, baking powder and garlic powder.
In the third whisk together the eggs and hot sauce.
In a large cast iron skillet, add enough oil to make one inch worth. Bring oil to 360 degree F.
Once oil reaches temp, press individual breasts into flour, next into egg and finally into crumb mixture, pressing so crumbs adhere.
Fry three pieces at a time, for 4 minutes, turn and fry about 4 more minutes or until chicken is golden and juices run clear.
Season while hot if desired!
