Ingredients
- 6 - boneless skinless chicken thighs
- - olive oil
- 1 tablespoon butter
- 2 cups chicken stock
- 2 tablespoons tomato paste
- 4 - shallots chopped
- 3 cloves garlic minced
- 1/2 cup dry white wine
- 1/3 cup heavy cream
- 2 tablespoons fresh tarragon minced
How To Make tarragon chicken

Step 1Season the chicken with salt and pepper. Place oil in a heavy skillet. Add the chicken brown on both sides about 4 minutes. Remove chicken and set aside.

Step 2Add the butter, shallots and garlic. Saute until shallots are golden. Add the white wine and cook until most has evaporated. Add the chicken stock, and tomato paste. Place the chicken back into pan and simmer until chicken is done. Remove chicken and stir in cream. Add the tarragon. Bring to a boil taste and adjust seasoning and serve over chicken
