tamra's green chili chicken cream cheese dip
So It is Sunday afternoon, and I am in the kitchen taking the leftovers and turning them into something new for the week. Leftover taco meat? well that becomes enchaburritos. Left over Roast and vegies oh had a couple of leftover ears of corn in the frig so I threw that into the mix as well. Came up with some yummy beef soup. Then I see all these jalapenos that need to be used so I think to my self what cn I do with these, and of course the first thing that pops into my head CHEESE. I had some cream cheese and some longhorn, so I know I can work with this....Wo away I went, and in the process came up with this little goodie, and when my Husband tasted it he told me to wright it down. So here I am at the computer putting my latest creation down. Hope you give it a try and find that you like it as much as we do.
Ingredients
- 1 can 12 oz chicken, drained ( i use the canned kirkland chicken from costco)
- 4 ounces cream cheese at room temp
- 1 can 4 oz fire roasted green chili
- 4 teaspoons cilantro, fresh and finely chopped
- 1/4 small purple onion, finely chopped
- 1/2 - jalapeno pepper finely chopped
- OTHER ITEMS I USED FOR GARNISH
- 1 slice tomatoe, but into small bite size wedges
- - olives, pitted
- - 3 whole cilantro leaves

Step 1Place room temp cream crease In small mixing bowl and lightly beat until creamy.

Step 2Add the remaining ingredients; stir until evenly mixed.

Step 3Chill for 30 at least 30 minutes so flavors can mingle.

Step 4Serve with Tortilla Chips, or use to make a chicken salad.
