Ingredients
- CHICKEN
- 1 whole chicken cut into pieces
- 1 cup soy sauce
- 1/4 cup Mirin
- 3 tablespoons sugar
- 2 tablespoons minced garlic
- 2 tablespoons Chinese 5 spice
- 2 large egg yoks
- 1/2 cup corn starch
- 2 cups rice flour
- oil, for deep frying
- TAIWANESE MINCED PORK SAUCE
- 2 pounds ground pork
- 3 tablespoons vegetable oil
- 1/3 cup plus 2 Tbsp soy sauce
- 3 tablespoons rock sugar
- 1 teaspoon white pepper
- 3 large shallots, chopped
- 1/4 cup water
- chopped scallions, for garnish
How To Make taiwanese fried chicken with minced pork sauce

Step 1Start with the sauce. Heat the oil in a Dutch oven. Add the pork and shallots. Cook 2 minutes. Add the soy sauce, rock sugar, and white pepper, stir to combine. Cover with a lid and cook on low for 30 minutes. Stir it twice during the cooking and add water if it looks too dry. Remove from the heat and let sit covered for another 30 minutes.

Step 2For the chicken Combine the soy sauce, Mirin, sugar, garlic, and one tablespoon of Chinese 5 spice in a bowl. Add the chicken. Let marinate overnight in the fridge. Remove the chicken from the marinade and drain. Heat oven to 350 degrees. Add the chicken to a baking pan and bake for about 15 minutes.

Step 3Mix the egg yolks with the corn starch in a large bowl. Add the chicken and coat well. Dredge the chicken in the rice flour. Heat a skillet with 2 inches of oil and get it to 359 degrees. Fry the chicken on both sides until crispy and done, about 12 minutes.

Step 4Serve with the pork sauce and garnish with scallions.
