swiss chicken quiche

I've never been much of a fan of quiche but a friend made this for a potluck at work and so I tried it not wanting to hurt her feelings. I have to admit, I was pleasantly surprised to find the flavor delightful, comforting and wanting seconds. It's so quick and easy and I'm sure your taste buds will be asking for seconds also.

Ingredients For swiss chicken quiche

    9 inch pie shell, unbaked
  • 1 c
    swiss cheese, grated
  • 2 Tbsp
    flour
  • 1 Tbsp
    chicken bouillon granules
  • 2 c
    cooked and cubed chicken breast
  • 1 c
    milk
  • 3
    eggs, well beaten
  • 1/4 c
    finely chopped onion
  • 2 Tbsp
    chopped green pepper
  • 2 Tbsp
    chopped pimento (optional)

How To Make swiss chicken quiche

    Preheat oven to 425 degrees. Bake pie shell 8 minutes (quick shell) Remove from oven and set aside. Reduce oven temperature to 350 degrees.

    In medium bowl, toss cheese, flour and bouillon; Add remaining ingredients. Mix well. Pour into pie shell and bake 40-45 minutes until pie is set.

    I also use monterey jack/cheddar mix and I use 1 1/2-2 cups cheese instead of 1 cup.
