Swiss Chicken Enchilada Salsa Verde
3 ccooked diced chicken
4 ozcan mild green chilies
16 ozpaso salsa verde
1 1/2 cheavy cream
8flour fajita tortillas
2 cshredded monterery jack cheese
·oil for frying
·cilantro for garnish
How to Make Swiss Chicken Enchilada Salsa Verde
- Preheat oven 350 degrees
Mix the chicken, green chilies, and salsa verde together and set aside.
- In a wide shallow dish add the heavy cream and salt. Set aside.Spray a 9x13 pan.
Add oil to a large frying pan. Fry each tortilla until it blisters and bubbles up a bit. Immediately dip it in the heavy cream and lay it on a baking sheet. Repeat until all tortillas are done and dipped.
- Fill each tortilla with chicken mixture fold in the shorter sides and roll up. Lay seam side down in 9 x 13 pan. Pour the cream over the top and place in oven and bake about 25 to 30 minutes. Add cheese to the top and bake until cheese has melted. Top with fresh cilantro.
