Ingredients
- 2/3 cup water
- 1/4 cup dijon mustard
- 3 tablespoons apricot preserves
- 1 tablespoon low sodium tamari or braggs aminos
- 1 tablespoon scallions, finely chopped
- 4 - 6 boneless skinless chicken thighs (can sub 4 boneless skinless breasts)
How To Make sweet & tangy chicken thighs

Step 1Using a large non-stick skillet, combine water, mustard, preserves, tamari and chopped scallions.

Step 2Add chicken to skillet and saute over medium-high heat and then reduce heat. Simmer for approximately 15 minutes or until chicken is cooked through and is tender. ***Add additional water, if needed, if sauce becomes too thick.

Step 3Serve with rice or couscous.
