Ingredients For sweet & tangy chicken thighs

  • 2/3 c
    water
  • 1/4 c
    dijon mustard
  • 3 Tbsp
    apricot preserves
  • 1 Tbsp
    low sodium tamari or braggs aminos
  • 1 Tbsp
    scallions, finely chopped
  • 4 - 6
    boneless skinless chicken thighs (can sub 4 boneless skinless breasts)

How To Make sweet & tangy chicken thighs

    Using a large non-stick skillet, combine water, mustard, preserves, tamari and chopped scallions.

    Add chicken to skillet and saute over medium-high heat and then reduce heat. Simmer for approximately 15 minutes or until chicken is cooked through and is tender. ***Add additional water, if needed, if sauce becomes too thick.

    Serve with rice or couscous.
