Sweet & Spicy Chicken

This is a quick and easy recipe for any mid-week meal. It is not especially spicy but can vary with the heat of the salsa you use. My family likes it served over rice.
Ingredients

1 lbboneless skinless chicken breasts, cut into 1/2 inch cubes

3 Tbsptaco seasoning mix

1 or 2 Tbspvegetable oil

1 jar(s)chunky salsa

1/2 cpeach preserves
How to Make Sweet & Spicy Chicken
- Place the chicken in a large resealable plastic bag; add taco seasoning mix and toss to coat.
In a skillet, brown chicken in oil.
Combine the salsa and peach preserves; stir into skillet.
Bring to a boil. Reduce heat; cover and simmer for 2 or 3 minutes or until meat juices run clean.
Serve over rice and enjoy!!
