sweet and sour chicken

One of my very first dishes I ever made many years ago and was very successful! Serve it with corn fritters for a nice alternative. I can post the recipe for the fritters later.

Ingredients

  • 4 - chicken pieces (boneless)
  • 1 - clove garlic, crushed
  • - salt and pepper to taste
  • 1/4 cup all purpose flour
  • 1/3 cup canola oil for frying
  • (1) 16 oz - canned pineapple chunks (reserve juice for sauce)
  • few - red and green grapes
  • few - slices preserved ginger (optional)
  • FOR THE SAUCE
  • 2 teaspoons cornstarch
  • 1 tablespoon soy sauce, low sodium
  • 3 tablespoons vinegar (white or cider)
  • 1/4 cup granulated sugar or honey
  • 2/3 cup chicken stock
  • 2/3 cup pineapple syrup or juice
  • TO GARNISH
  • - little finely chopped canned pineapple and (optional) preserved ginger

How To Make sweet and sour chicken

  • Step 1
    Heat the oil, and sauté the crushed garlic. Coat the chicken with the flour and seasoning, and fry until browed on all sides. If preferred, the chicken may be cut into neat cubes before cooking.
  • Step 2
    Lower the heat, add pineapple pieces, grapes and ginger. Continue cooking over low heat for 15-20 minutes, or until tender.
  • Step 3
    For the sauce, blend all ingredients together, put into a pan, and boil for 2-3 minutes, stirring constantly. Garnish the chicken with pineapple and ginger and serve with the sauce (or you can pour the sauce over the chicken so that it absorbs all that goodness!)
