supper skillet chicken nachos
I took this super easy recipe and gave it some Flare! It's 3 Simple Steps! It goes further, if you cut chicken in smaller pieces.. plus, it's all done in a Skillet! Enjoy!

Ingredients
- 1-1/4 pound boneless skinless chicken breasts
- 1 package taco seasoning mix
- 1 can tomato sauce
- 1 medium red bell pepper
- 1 can 15 oz. black beans-drained and rinsed
- 1 can 15 oz. whole kernel corn-drained
- 2 cups mexican blend shredded cheese
- 1 can 4 oz diced mild green chiles
- 1/4 cup chopped fresh cilantro
- 6 ounces tortilla chips(about 42 chips)

Step 1In a 12 inch, nonstick skillet,heat oil(1 Tablespoon) over medium-high. Cook chicken in oil 3-5 min.,stirring occasionally, until no longer pink in center.

Step 2Stir in Taco seasoning mix,tomato sauce,bell pepper,beans,corn,green chiles,and 1 cup of the cheese. Reduce heat to medium,cook 3 to 5 min.,stirring occassionally, until cheese is melted

Step 3Divide tortilla chips between 6 plates. Spoon chicken mixture evenly over chips. Sprinkle with remaining 1 cup cheese and the cilantro.

Step 4You can use 1 and 1/4 lb. ground beef also ,thoroughly cooked and then drain off fat.
