1Prepare chicken and set aside. Warm tortillas in non-stick pan and spray with vegetable oil. Place tortillas on a plate. Put on tortilla, chicken,lettuce, sour cream, cheese, and salsa. Fold over and make sure you put small amounts so that ingredients don't fall out.
2Summer Salsa: 1 can chunky pineapple, 1 can tropical fruit, salt to taste, lemon juice to taste,1/8 tsp. parsley flakes. Finely chop all fruit, add salt and lemon juice to taste, sprinkle in parsley flakes. Serve on other ingredients in Sunshine Tacos. Also great as a salad topping.
