Ingredients

  • 6 - chicken breast halves, skinless and boneless
  • 8 slices bacon
  • 1 - spanish onion finely chopped
  • 1 - bell pepper chopped
  • 2 tablespoons black olive finely chopped
  • 1/3 cup grateded parmesan cheese
  • 1/3 cup grated jalopeno cheese
  • - flour to coat chicken
  • 2 - eggs lightly beat
  • 1 1/2 cups bread crumbs, dry
  • 1/4 cup olive oil

How To Make stuffed chicken breast

  • Step 1
    cook bacon in skillet, remove bacon, remove and reserve bacon fat, leave 1 TBSP in skillet
  • Step 2
    over med heat cook onion, garlic, and pepper heat for 5 mins (til onion is tender) add crumbled up bacon.
  • Step 3
    place onion mixtur in bowl add olives and cheese.
  • Step 4
    cut deep pocket into breast, almost to the other side of breast.
  • Step 5
    fill each breast with peppper mixture. secure with tooth picks (must do)
  • Step 6
    coat in flour
  • Step 7
    dipp in eggs
  • Step 8
    coat in bread crumbs
  • Step 9
    heat oil in skillet, cook breast over med heat 15 to 20 mins turnning 1/2 way thru cook time( cover if needed to help cooking time)
  • Step 10
    to serve remove tooth picks and slice place on a bed of lettus to garnish
