My kids enjoy this tasty meal. They like their meals quick, fast, and in a hurry during this time of year! It's busy with all the football, band practice, and other events. That doesn't include work. This little dish is just what we need to fill our tummys with a warm quick home cooked meal. It's one that I'll continue to make for the rest of my life! I hope you'll find it that good too.

Ingredients
- 19 ounces birds eye steam fresh broccoli
- 3 stalks scallions
- 1 large chicken breast halves, skinless and boneless
- 1/2 stick butter
- 1 can cream of celery soup
- 2 tablespoons dried onions
- 1 package mahatma yellow rice, cooked
- 2 tablespoons olive oil
- 4-6 ounces shredded colby-jack cheese
- - salt and pepper to taste
How To Make stovetop chicken broccoli casserole

Step 1Put rice on to cook as follows.

Step 2In the mean time, put olive oil, dried onions, and salt-pepper to taste Chicken breast in the pan and brown on both sides. It will not be done through and through. Take out and dice. Return to pan.

Step 3Add Broccoli, butter, cream of celery soup, and scallions. Cover and Simmer until rice is done.

Step 4Mix rice into the broccoli mixture, top with 4-6 oz of shredded Colby-Jack cheese. Let sit until cheese is melted. serve with ritz crackers.
