Ingredients
- 1 pound boneless skinless chicken breast
- 6 cups broccoli florets
- 2 large red or green peppers, quartered lengthwise cut into 1/8" strips
- 1 large onion, halved lengthwise, cut into 1/4" slices
- 2 large garlic cloves, minced
- 1/2 teaspoon dried thyme, crumbled
- 1 teaspoon dried basil, crumbled
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- 4 tablespoons parmesan, freshly grated
How To Make stir fry of broccoli & chicken

Step 1Pound breasts between waxed paper to thickness of 1/4 inch.

Step 2Wrap each chicken breast separately in plastic and freeze until firm but not solid.

Step 3Cut chicken crosswise into 1/8 inch wide strips.

Step 4Cover broccoli with cold water in medium bowl.

Step 5Coat heavy skillet with vegetable spray.

Step 6Add olive oil and heat over high heat 1 minute.

Step 7Add red peppers (or green), onion, garlic, basil, thyme, repper and rosemary to pan.

Step 8Stir fry 2 minutes.

Step 9Drain broccoli, but do not shake off excess water and add to skillet.

Step 10Stir fry 3 minutes then reduce heat to medium-low, cover and steam 2 minutes.

Step 11Stir in chicken.

Step 12Cover and steam until chicken is almost cooked through, about 1 minute.

Step 13Uncover and increase heat and stir fry until liquid reduces slightly, about 1 minute.

Step 14Divide among heated plates.

Step 15Top each portion with 1 tablespoon parmesan.
