  • 1 lb
    boneless skinless chicken breast
  • 6 c
    broccoli florets
  • 2 large
    red or green peppers, quartered lengthwise cut into 1/8" strips
  • 1 large
    onion, halved lengthwise, cut into 1/4" slices
  • 2 large
    garlic cloves, minced
  • 1/2 tsp
    dried thyme, crumbled
  • 1 tsp
    dried basil, crumbled
  • 1/2 tsp
    freshly ground black pepper
  • 1/2 tsp
    salt
  • 4 Tbsp
    parmesan, freshly grated

How to Make Stir Fry of Broccoli & Chicken

Step-by-Step

  1. Pound breasts between waxed paper to thickness of 1/4 inch.
  2. Wrap each chicken breast separately in plastic and freeze until firm but not solid.
  3. Cut chicken crosswise into 1/8 inch wide strips.
  4. Cover broccoli with cold water in medium bowl.
  5. Coat heavy skillet with vegetable spray.
  6. Add olive oil and heat over high heat 1 minute.
  7. Add red peppers (or green), onion, garlic, basil, thyme, repper and rosemary to pan.
  8. Stir fry 2 minutes.
  9. Drain broccoli, but do not shake off excess water and add to skillet.
  10. Stir fry 3 minutes then reduce heat to medium-low, cover and steam 2 minutes.
  11. Stir in chicken.
  12. Cover and steam until chicken is almost cooked through, about 1 minute.
  13. Uncover and increase heat and stir fry until liquid reduces slightly, about 1 minute.
  14. Divide among heated plates.
  15. Top each portion with 1 tablespoon parmesan.
