Stir Fry Ginger Chicken

2 Tbsp
chicken breast filets
2 c
broccoli, chopped
1.5 c
snow peas
1/2 c
water chestnuts, sliced
1.5 c
chicken broth
2 Tbsp
5/8 tsp
ground ginger
1 tsp
minced garlic
1/4 c
soy sauce


1In electric skillet or wok over medium heat in 2 tablespoons butter, stir-fry chicken until completely browned.
2Remove from pan.
3In same pan in remaining oil, stir-fry vegetables and garlic until tender.
4In a bowl, combine broth, cornstarch, soy sauce and ginger until smooth.
5Add to vegetables with cooked chicken.
6Cook until mixture boils and thickens, stirring constantly.
7Serve over rice or noodles.
