I love this recipe, because I can make it with whatever meat I happen to have. It is a wonderful way to use up leftovers.

Ingredients

3 c
meat (you can use steak, roast, beef, chicken, shrimp etc)
3 Tbsp
butter
20 oz
canned pineapple, drained (save liquid)
2 Tbsp
soy sauce
1 Tbsp
sugar
1/4 tsp
salt
2 Tbsp
cornstarch
3 c
vegetable blend or oriental vegetable mix
5 c
hot cooked rice
1 Tbsp
vinegar
2 Tbsp
water, to mix with cornstarch

How to Make Stir-Fry

Step-by-Step

  • 1Melt butter in skillet over medium heat. Add meat and stir occasionally for 4 minutes.
  • 2Add enough water to the pineapple syrup to measure 2 1/4 cups water.
    Stir pineapple liquid, vinegar, soy sauce, sugar and salt to skillet and simmer 5 minutes.
  • 3Mix cornstarch with a little water. Gradually stir into meat mixture, stirring constantly, until mixture becomes thick and bubbly.
  • 4Stir in pineapples and vegetables. Cook about 3 minutes. Serve over hot rice.
