I love this recipe, because I can make it with whatever meat I happen to have. It is a wonderful way to use up leftovers.

Ingredients
- 3 cups meat (you can use steak, roast, beef, chicken, shrimp etc)
- 3 tablespoons butter
- 20 ounces canned pineapple, drained (save liquid)
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 2 tablespoons cornstarch
- 3 cups vegetable blend or oriental vegetable mix
- 5 cups hot cooked rice
- 1 tablespoon vinegar
- 2 tablespoons water, to mix with cornstarch
How To Make stir-fry

Step 1Melt butter in skillet over medium heat. Add meat and stir occasionally for 4 minutes.

Step 2Add enough water to the pineapple syrup to measure 2 1/4 cups water. Stir pineapple liquid, vinegar, soy sauce, sugar and salt to skillet and simmer 5 minutes.

Step 3Mix cornstarch with a little water. Gradually stir into meat mixture, stirring constantly, until mixture becomes thick and bubbly.

Step 4Stir in pineapples and vegetables. Cook about 3 minutes. Serve over hot rice.
