Ingredients

  • 1.5 pounds boneless skinless chicken breast cut in 1 1/2" strips
  • 2 tablespoons oil
  • 2 tablespoons ginger root, minced
  • 2 medium onions, sliced
  • 6 cups broccoli florets
  • 1 cup thinly sliced carrots
  • 1/2 pound mushrooms, sliced
  • 3/4 cup chicken stock
  • 2 tablespoons sherry
  • 2 teaspoons low sodium soy sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 4 cups chinese cabbage or bok choy, sliced

How To Make stir fried chicken and broccoli

  • Step 1
    In wok or large heavy skillet, heat oil over high heat.
  • Step 2
    Gradually add chicken to very hot oil with 1/2 of minced ginger root.
  • Step 3
    Stir-fry for 2 minutes.
  • Step 4
    Remove from wok.
  • Step 5
    Set aside.
  • Step 6
    Add onion and stir-fry for 2 minutes.
  • Step 7
    Set aside with chicken.
  • Step 8
    Add broccoli, carrots, mushrooms and rest of ginger root to wok.
  • Step 9
    Stir fry for 2 minutes.
  • Step 10
    Add a little water, if necessary to prevent sticking.
  • Step 11
    Mix stock, sherry and soy sauce.
  • Step 12
    Pour over broccoli.
  • Step 13
    Cover and steam for 2 minutes.
  • Step 14
    Stir in onions and chicken.
  • Step 15
    Mix cornstarch and water.
  • Step 16
    Stir into wok.
  • Step 17
    Bring to boil.
  • Step 18
    Add chinese cabbage, bok choy or green cabbage.
  • Step 19
    Stir and cook for 1 minute until crisp-tender.
