boneless skinless chicken breast cut in 1 1/2" strips
2 Tbsp
2 Tbsp
ginger root, minced
2 medium
onions, sliced
6 c
broccoli florets
1 c
thinly sliced carrots
1/2 lb
mushrooms, sliced
3/4 c
chicken stock
2 Tbsp
2 tsp
low sodium soy sauce
2 tsp
2 Tbsp
4 c
chinese cabbage or bok choy, sliced

How to Make Stir Fried Chicken and Broccoli


  • 1In wok or large heavy skillet, heat oil over high heat.
  • 2Gradually add chicken to very hot oil with 1/2 of minced ginger root.
  • 3Stir-fry for 2 minutes.
  • 4Remove from wok.
  • 5Set aside.
  • 6Add onion and stir-fry for 2 minutes.
  • 7Set aside with chicken.
  • 8Add broccoli, carrots, mushrooms and rest of ginger root to wok.
  • 9Stir fry for 2 minutes.
  • 10Add a little water, if necessary to prevent sticking.
  • 11Mix stock, sherry and soy sauce.
  • 12Pour over broccoli.
  • 13Cover and steam for 2 minutes.
  • 14Stir in onions and chicken.
  • 15Mix cornstarch and water.
  • 16Stir into wok.
  • 17Bring to boil.
  • 18Add chinese cabbage, bok choy or green cabbage.
  • 19Stir and cook for 1 minute until crisp-tender.
