Ingredients
- 1.5 pounds boneless skinless chicken breast cut in 1 1/2" strips
- 2 tablespoons oil
- 2 tablespoons ginger root, minced
- 2 medium onions, sliced
- 6 cups broccoli florets
- 1 cup thinly sliced carrots
- 1/2 pound mushrooms, sliced
- 3/4 cup chicken stock
- 2 tablespoons sherry
- 2 teaspoons low sodium soy sauce
- 2 teaspoons cornstarch
- 2 tablespoons water
- 4 cups chinese cabbage or bok choy, sliced
How To Make stir fried chicken and broccoli

Step 1In wok or large heavy skillet, heat oil over high heat.

Step 2Gradually add chicken to very hot oil with 1/2 of minced ginger root.

Step 3Stir-fry for 2 minutes.

Step 4Remove from wok.

Step 5Set aside.

Step 6Add onion and stir-fry for 2 minutes.

Step 7Set aside with chicken.

Step 8Add broccoli, carrots, mushrooms and rest of ginger root to wok.

Step 9Stir fry for 2 minutes.

Step 10Add a little water, if necessary to prevent sticking.

Step 11Mix stock, sherry and soy sauce.

Step 12Pour over broccoli.

Step 13Cover and steam for 2 minutes.

Step 14Stir in onions and chicken.

Step 15Mix cornstarch and water.

Step 16Stir into wok.

Step 17Bring to boil.

Step 18Add chinese cabbage, bok choy or green cabbage.

Step 19Stir and cook for 1 minute until crisp-tender.
