I had something similar to this at Shipwreck Landing restaurant in St. John. Had to try to replicate.

  • 4
    chicken breasts, boneless and skinless
  • 4 Tbsp
    olive oil
  • 2 Tbsp
    basalmic vinegar

  • 1/2
    red bell pepper, diced
  • 2/3 c
    diced pepperocini
  • 1/4 lb
    feta cheese, sliced thin

How to Make St. John chicken


  1. Pound chicken to a filet.
  2. Marinate chicken for 2-5 hours in a large ziploc bag with a mix of the oil and vinegar.
  3. Drain chicken and cook on grill at low heat till cooked through.
  4. In the meantime sauté both peppers in a little butter.
  5. Spoon some pepper mixture on each breast, layer on some cheese, close grill cover and heat till cheese is melted.
