I had something similar to this at Shipwreck Landing restaurant in St. John. Had to try to replicate.

Ingredients
- CHICKEN PREP
- 4 - chicken breasts, boneless and skinless
- 4 tablespoons olive oil
- 2 tablespoons basalmic vinegar
- TOPPING
- 1/2 - red bell pepper, diced
- 2/3 cup diced pepperocini
- 1/4 pound feta cheese, sliced thin
How To Make st. john chicken

Step 1Pound chicken to a filet.

Step 2Marinate chicken for 2-5 hours in a large ziploc bag with a mix of the oil and vinegar.

Step 3Drain chicken and cook on grill at low heat till cooked through.

Step 4In the meantime sauté both peppers in a little butter.

Step 5Spoon some pepper mixture on each breast, layer on some cheese, close grill cover and heat till cheese is melted.
