If you have lots of Zucchini and yellow squash, here is a quick and easy way to use it. Everyone who has tried this recipe loves it.

Ingredients

  • 1 medium zucchini, cut into bite size pieces
  • 2 small yellow squash, cut into bite size pieces
  • 1 medium onion, diced
  • 1 can chicken broth, i use low sodium
  • 1 package hidden valley ranch dressing mix
  • COOK ALL ABOVE INGREDIENTS UNTIL SQUASH IS TENDER. YOU MAY ALSO ADD MUSHROOMS TO THE ABOVE.
  • 1/2 package corn tortillas (12)
  • 2 cans cream of mushroom soup, fat-free
  • 1/2 cup milk
  • 1 can chicken, drained
  • 1 teaspoon cumin
  • ADD TORTILLAS, SOUP, MILK, CHICKEN AND CUMIN TO VEGGIE MIXTURE. TOP WITH GRATED CHEESE.
