Ingredients
- 1 medium zucchini, cut into bite size pieces
- 2 small yellow squash, cut into bite size pieces
- 1 medium onion, diced
- 1 can chicken broth, i use low sodium
- 1 package hidden valley ranch dressing mix
- COOK ALL ABOVE INGREDIENTS UNTIL SQUASH IS TENDER. YOU MAY ALSO ADD MUSHROOMS TO THE ABOVE.
- 1/2 package corn tortillas (12)
- 2 cans cream of mushroom soup, fat-free
- 1/2 cup milk
- 1 can chicken, drained
- 1 teaspoon cumin
- ADD TORTILLAS, SOUP, MILK, CHICKEN AND CUMIN TO VEGGIE MIXTURE. TOP WITH GRATED CHEESE.
