spinach, mushroom, and cheese stuffed chicken breast
Baked tender chicken breasts stuffed with fresh baby spinach, minced garlic, mushrooms, and a mixture of Parmesan, Asiago, mozzarella, fontina, Romano, provolone, and Feta cheeses, topped with fresh diced tomatoes. I don't really measure things when I cook. I use recipes as ideas and change them to suit my family's taste.

Ingredients
- 6 chicken breasts, boneless and skinless
- 2 cups Italian blend cheese
- 1 cup Feta cheese
- 6 teaspoons minced garlic
- 1 bag fresh baby spinach
- 2 cups sliced fresh mushrooms
- 3 large fresh tomatoes, diced
How To Make spinach, mushroom, and cheese stuffed chicken breast

Step 1Make a deep pocket in each chicken breast. Set aside.

Step 2Mix together the cheeses in a bowl. Mince the garlic cloves and set aside.

Step 3Stuff each chicken breast with spinach, mushrooms, garlic, and cheeses.

Step 4Place each chicken breast in a parchment-lined baking dish. Bake at 350 for 35 minutes or until juices run clear. I always sprinkle some of the cheese mixture on top and bake for 5 -10 minutes.

Step 5Once done baking serve with diced tomatoes over the top.
