spinach chicken wraps
Sometimes, eating tasty and reasonably healthy can go hand in hand. Spinach and chicken anchor this dish, but mozzarella cheese and Caesar dressing add the flavor (at the expense of calories). This is a great way to get the kids to eat spinach and enjoy chicken.

These spinach chicken wraps are a delicious light meal or snack. Marinating the chicken tenders in Italian dressing makes them moist and flavorful. A combination of chopped tomatoes, onions bell peppers, and fresh basil adds tons of flavor to the wraps. Drizzling Caesar dressing adds creaminess and brings the flavors together. We used a toothpick to secure the wraps before we wrapped them in foil. Some we wrapped in foil and some we kept unwrapped. Baking them unwrapped crisps up the tortilla a little bit, and we enjoyed that.
Ingredients
- 8 medium chicken tenders
- 1 cup Italian dressing
- 4 medium tomatoes, chopped
- 1 bunch fresh basil, chopped
- 1/2 small bell pepper, chopped
- 1/2 small onion, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/3 teaspoon black pepper
- 1 tablespoon extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 8 - soft flour tortillas, taco-sized
- 8 ounces fresh spinach
- 8 ounces mozzarella cheese, shredded
- 1/2 cup Caesar dressing
How To Make spinach chicken wraps

Step 1Marinate chicken tenders for 2-4 hours in Italian dressing.

Step 2Cook on high heat in a skillet or on a grill.

Step 3Preheat the oven to 350 degrees F. Add chopped tomatoes, basil, bell pepper, and onion to a bowl. Combine with oregano, salt, black pepper, olive oil, and balsamic vinegar. Stir to blend.

Step 4Take chicken tender and center on a flour tortilla.

Step 5Add a small handful of spinach, 1 Tbsp of tomato mixture, and 2 Tbsp of mozzarella cheese.

Step 6Add a liberal amount of Caesar dressing.

Step 7Fold up the bottom edge and then tri-fold the wrap. Wrap in foil. Repeat the process until all ingredients are used up. Place foiled wraps into a baking pan. Put in the preheated oven for 15 - 20 minutes to melt the cheese.
